The Step Plus activity is good but it would be much better if you could have different levels (difficulty or time). That is what makes Boxing repeatable - you don't just do a few minutes worth of effort.
What could also be good is some alternate step music and patterns ... that crazy step music sometimes gets stuck in my head for hours at a time!

Me too. Even the Advanced routine becomes predictable very quickly. I would love a longer and/or more complex routine, maybe an Expert level, like in Rhytym Boxing.
The step in Wii Fit isn't really much of a workout anyway. I love the step exercises in EA Sports More Workouts but it too gets really predictable after awhile. I added risers to my board and I'm usually sweating too much after a few 10 minute sessions to care that it repeats!
