 Post subject: Broccoli soup

This light soup is as easy on the wallet as it is on calories and carbohydrates. It's also simple to make.

This is the first thing that I have ever made that uses practically the whole broccoli. At first I doubted it would work, but it really is very good. Enjoy!

Serves 6
Preparation time: 20 minutes
Cooking time: 30 minutes

Ingredients:

750 g broccoli (including stem)
1 onion
1.4 litres of chicken bouillon (enough bouillon cubes in water will work very well)
1 tablespoon of olive oil
50 g of pine nuts (optional)
Pepper (to taste)

Preparation:

Finely chop the onion.

Wash the broccoli and detach the little green bouquets. Cut off as much of the stem as possible on the bouquets. Do not throw away the stem.

Finely chop the stem. There will be a few bits too hard to chop; just pare off these bits and chop up the rest.

Heat up the olive oil then add the onion. Cook the onion until it is soft and going transparent, but do not let it brown. Once the onion is cooked, add the chicken bouillon and bring the mixture to a boil.

Once the bouillon is boiling, add the broccoli stem. Bring it to a boil again, then cover and simmer on a low heat for 15 minutes. You can add the pepper at this point if you wish.

Next, add the broccoli flowers. Bring the soup to a boil again, then cover and simmer on a low heat for 10 minutes, or until the bouquets are tender and can easily be crushed with a spoon.

Take the soup off the heat and, if you are using them, add the pine nuts.

Serve hot.

Nearly the same as we do.
We (my wife and I) used some time vegetable soup cubes.
Next time we try pine instead caraway.

If my grandson eat this kind of soup with us we gave a potato into the soup and mix it creamy.

Adding a potato sounds nice. I'll have to try that. Do you just bake the potato for do you mash it up and then add it?

I cut the uncooked potato into 1cm* (1/2 inch) cubes and took it with the broccoli into the soup before coking.

*Not measurement accuracy of course

Hi lajoggeuse,
Thanks for sharing broccoli soup recipe with everyone. I will try broccoli soup as broccoli is great for health. Broccoli regulates blood pressure and helps in maintaining nervous system healthy. Broccoli prevent us from cancer, osteoporosis, stroke and heart disease and common cold.
