Unfortunately, the result isn't exact if you don't put your feet very, very exactly centrically. I writed more the one computer program for official center of gravity and wheel load measurements for rail vehicles and know how exactly centered for 1% precision is necessary. The 0.1% display is only a joke of the Wii.

WOW that is impressive! I am still like 57.7% on the left leg, and about 41.3% on the right leg. My excuse is one leg is really shorter then the other, I actually had my measure my legs and my one leg is 2" shorter than the other one. If I were to stand perfectly centered, my one foot would be hanging in the air!
The balance test is looking for you to have your weight evenly distributed between your 2 feet. The game uses it to help determine your Wii Fit age which is really not a very accurate measurement of anything. From doing it over and over everyday now I know how I have to stand in order to make it near even. Doesn't mean I'm more balanced or that I stand that way when I'm not on the board, just that I've mastered that aspect of the game. I wouldn't place too much value on the whole thing.

You then should for this one wear orthopedic shoes even out this length difference your hip joints protectedly with that be. (The automatic translation of this sentence sounds terrible for me.)
