Except one picture I did all screen shots with cheap little digital cameras (mostly a Canon PS-590IS) from an TV. Its quick and easy but with a lousy quality (moire interferences). Connecting the Wii direct to a computer caused in ever chase a time delay. Using my five year old computer with his TV input will bring a time delay of about a half second and some games are really unplayable.

We haven't seen any dogs recently. Do we have to start from the beginning course again? No cats either... ever.
We noticed that we have 4 stars and a new bike on the Expert course but the other courses we have 2 or 3 stars. What's the requirements to get all 4 stars in each course level?

Cats: you will only see a cat if you have created a cat-Mii to represent a (possibly fictional) pet cat.
Dogs appear in specific places in each level. If you adopt a route that doesn't go by any of those places, you won't see any dogs. If you have a cat-Mii, it will appear instead of a dog in the same places that the dogs appear.
Stars: Each level/course has its own criteria for gaining different numbers of stars, but the basic idea is that the shorter the distance you take to touch all the flags (in a flag-hunt level), the more stars you get (up to a max of 4, obviously). In the free-ride level, the scoring criterion is the total distance travelled in 30 minutes: the longer the better.
