 Post subject: Steamed White Fish Fillets

This dish is simple to make, and has absolutely no carbs.

(Serves 4)

1kg white fish fillets, cod (scrod), plaice, etc.
60g butter
seasoning
lemon juice

Remove the skin and bones from the fish.

Lay the fillets in a bain-marie, and add the butter, seasoning, and a squeeze of lemon juice.

Cover the bain-marie, and place it over a pot of boiling water (not in contact with the water).

Cook for 15 to 20 minutes, at which point the fish should be cooked through.

This is very nice. Good for breakfast, for a light main course along with some steamed vegetables, and good as a starter.

We make a similar dish here in FL seasoned with butter, garlic flavor olive oil and lemon with old bay. But we wrap the fish in foil and smack it on the grill. It takes about 15 minutes at med heat and it comes out with a nice crisp crust. I favor talapia myself but any white fish works. ;)

My wife also use foil in the baking pipe, but using vegetable oil instead of butter.
She usually adds rice too.
